So, here’s me on August 1st, 2015 – 250 Lbs overweight, fat, and tired pretty much all the time. How did I get here? Like many of us Americans, it sort of “just happens” as you get older. Or, at least, that’s what we tell ourselves. I, however, can tell you exactly how I got there.
A diet high in sugar, lectins, high-fructose corn syrup, dairy, conventional meats, and grains (wheat, rice, corn, etc).
A few years ago I came to the US from Canada, and in 2010 I started to put on about 10 lbs every year. I got up to 250 lbs. The main difference between Canada and the US? High fructose corn syrup. It makes you fat. Canadian food companies don’t use it. But since much of the corn grown in the USA is subsidized by the government, our chemists have found all sorts of uses for it. High fructose corn syrup is basically concentrated corn sugar, and it’s way cheaper than regular cane sugar. So, American food manufacturers use it. And you eat it. And it makes you fat – along with regular sugar, antibiotic-laced meats, chemically sprayed crops, tainted dairy, grain products, and the that little critter most people have never heard of – LECTINS – it’s a perfect recipe for weight-gain. You will learn more about this in my other articles.
As you can tell by the title of this blog, I am a chef. And while I found all sorts of delicious ways to get fat over the years (including fast food) I have also found delicious and satisfying ways to lose weight.
Although I came up with most of these recipes, and worked hard at executing my weight loss plan, I can’t take all the credit. I had lost weight on the bone broth diet before, and also by following a paleo style diet. But I was still getting skin issues (psoriasis and eczema) and could not figure it out! So, a couple of years ago I gave up and went back to eating whatever I wanted, and while it was really enjoyable, I got back up to 235 lbs, and all the ghosts crept back in: the snoring, acid reflux, poor sleep, constant tiredness, and worst of all, I developed some kick-ass psoriasis on my arms and legs (the worst flare up I’ve ever had in my whole life!). I felt hopeless. That is until my mom practically forced a book down my throat – The Plant Paradox by Dr. Steven Gundry. His research is a mind-blowing game-changer in the field of food and health. By following Dr. Gundry’s advice (mainly avoiding lectins like the plague) I was able to get rid of most of my ailments, I have lost 35lbs (with little to no exercise) at the time of this writing, and in 3 months, my psoriasis is 90% gone! I’ve had a great improvement in my overall health, sleep quality, and most importantly, energy. I’m not perpetually tired anymore!
I didn’t make this blog to make money (although a cook book may be in the works), or to plug Dr. Gundry’s books (although I do recommend you read his book The Plant Paradox).
