This is the greatest thing ever to happen to Keto! Not only can you eat pizza on the Keto diet and stay in Ketosis, but the pizza crust is actually pretty damn good! It’s crispy, it’s light and it feels like you’re eating a wheat crust.
Enough with the blah blah blah.. let’s get to it.
Yield: 1 medium sized pizza (it fed all 4 of us)
Carbs: I calculated that the whole pizza had about 32g of carbs. Cut into 8 slices, each slice had about 4.5g of carbs.
Ingredients:
- 8oz bar of mozzarella cheese, shredded
- 1 cup of blanched almond flour
- 2 eggs
- 2 tsp of baking powder
- 1 tsp of xanthan gum
- 1 tsp of salt
Equipment used:
- Sheet pan
- Non-stick silicone baking mat (A MUST!!)
- A large mixing bowl (microwave safe)
- Your hands (so, you might need gloves)
- I also used a danish dough whisk, but your hands will work just fine
Instructions:
- Pre-heat your oven to 400 degrees F.
- Shred the mozzarella and put it in a mixing bowl. Put the bowl in the microwave and melt the cheese. It took 1:30 in my microwave.
- Add the almond flour to the cheese, add the baking soda, salt and xanthan gum. Start mixing it together with a fork (I used a Danish dough whisk at this point), but then realized hands would be the best.
- Mix all ingredients really well using your hands, really knead it and fold it until it all starts to come together.
- Add the 2 eggs and use your hands to mix it all up, working the dough until it all comes together into a sticky dough.
- Put the dough on the sheet pan, lined with the non-stick baking mat and shape into a pizza-shaped crust.
- Bake the crust for 10 to 15 minutes until it’s golden brown.
- Remove from oven, add your pizza sauce, shredded mozzarella and pizza toppings, and then put it back in the oven until the toppings are hot and mozzarella cheese is melted. It took 15 minutes in my oven.
- Remove from oven, cut up into wedges and serve hot. It’s crispy for the first 20 minutes, but once it starts to get cold it loses its crispiness. Enjoy!
