Lectin Free Pancake Recipe
Just because you’re on a lectin free diet doesn’t mean you can’t enjoy a proper Sunday morning every now and then!
I was really craving something sweet and satisfying, and I thought to myself, “Clearly, I should be able to combine lectin-free ingrediens into something resembling a pancake!” After rummaging through my pantry I was thrilled to have found all the components: a flour of some sort, salt, a benign sweetener, a levening agent, omega-3 eggs, and A2 milk! I figured this mixture would come together into something acceptable, but I was pleasantly surprised at how incredibly good these pancakes were! They were fluffy, airy, soft and tasted great.
This recipe will rival any regular pancake recipe, it’s that good!!
Yield: 5 pancakes
Ingredients:
- 1 cup of cassava flour
- 1.5 cups of A2 milk, or your fav milk substitute (works best with A2 milk)
- 1 tsp sea salt
- 1/2 tbsp baking powder
- 3/4 tbsp stevia sweetener
- 1 omega-3 egg
- Organic virgin coconut oil (for frying)
- Honey
Instructions:
- Combine and mix the dry ingredients with a whisk.
- Add the egg.
- Add the milk while whisking until all ingredients are mixed into a smooth batter. Use right away.
- Melt a tsp of coconut oil in a non-stick pan and cook your pancakes!
- Drizzle with honey.
