Lectin Free Pancake Recipe

Just because you’re on a lectin free diet doesn’t mean you can’t enjoy a proper Sunday morning every now and then!

I was really craving something sweet and satisfying, and I thought to myself, “Clearly, I should be able to combine lectin-free ingrediens into something resembling a pancake!” After rummaging through my pantry I was thrilled to have found all the components: a flour of some sort, salt, a benign sweetener, a levening agent, omega-3 eggs, and A2 milk! I figured this mixture would come together into something acceptable, but I was pleasantly surprised at how incredibly good these pancakes were! They were fluffy, airy, soft and tasted great.

This recipe will rival any regular pancake recipe, it’s that good!!

Yield: 5 pancakes

Ingredients:

Instructions:

  1. Combine and mix the dry ingredients with a whisk.
  2. Add the egg.
  3. Add the milk while whisking until all ingredients are mixed into a smooth batter. Use right away.
  4. Melt a tsp of coconut oil in a non-stick pan and cook your pancakes!
  5. Drizzle with honey.
